Fresh and Easy Pineapple Salsa Recipe

Pineapple salsa is so versatile. Perfect for salads or tacos and goes great with chicken and pork. This salsa is best prepared the day before. Store for up to three days in an air tight container. It can be eaten immediately after preparation, but refrigerating for at least 30 min. allows the juices and spices to meld together.

Ingredients
  

  • 2 c diced FRESH pinapple
  • 1/2 c. red or green pepper seeded and diced
  • 1/4 c chopped cilantro
  • 1 or 1/2 jalapeño, seeded and diced
  • 2 limes, juiced
  • 1 tsp cumin
  • salt to taste

Instructions
 

  • Combine all ingredients. Refrigerate for at least 30 minutes, or overnight if possible. Salsa can be consumed immediately, but refrigeration helps meld the juices and spices together.

Notes

Pro Tip: If you want a milder salsa, you can reduce the amount of jalapeño or remove it completely. Alternatively, for a spicier kick, leave in some of the seeds!
